GOURMET GREEK SALAD
The Greek Vegetarian

Ingredients:
Good quality Halloumi cut into chunks, extra virgin olive oil

Dressing:
½ cup extra virgin olive oil

1-1/2 tablespoon rich honey

 Juice of 1 lemon

Oregano

Salad:
Mixed salad leaves

Chopped cucumber

Chopped capsicum

Cherry tomatoes

Kalamata olives

Add at the end:
Fried pita bread chunks, pomegranate seeds, toasted almonds

Method:
Cook thick slices of halloumi in a pan with some olive oil over medium heat. Combine all salad ingredients into a large bowl. Mix all your dressing ingredients in a separate bowl. Pour the dressing over the salad leaves; gently mix together. Lastly add the fried halloumi, toasted almonds, fresh pomegranate seeds & fried pita bread chunks.
