We are so lucky in Australia that we live in a multicultural society that celebrates cuisine from all over the world. Culshaw’s Restaurant at the Majestic Roof Garden Hotel, however, specialises in a cuisine much closer to home, using Australian native foods in a culinary experience called “Hop, Snap and Swim”! Their signature dish features three Aussie icons – kangaroo, crocodile and barramundi!
In the kitchen, Head Chef Mathew Inkley says that for many people, the most exciting aspect of the dish is the chance to try their sweet and sour crocodile ribs – which have a slightly firmer texture than other white meats.
