Thai Beef and Mango Salad with Callum Hann

Ingredients for salad:
1 tablespoon olive oil
2 Porterhouse beef steaks,
1 cup snow peas
1 punnet cherry tomatoes
1/4 cup roasted cashews
1 ½ cups bean sprouts
½ bunch spring onions
1 bunch mint
1 bunch coriander (or Thai basil)
2 mangos

Ingredients for dressing:
1½ tablespoons fish sauce
2 limes
1 tablespoon brown sugar
1 large red chili

Make the dressing – put all the ingredients in a bowl and mix.
Chop ingredients for the salad.
Put salad in a large serving bowl or dish.
Drizzle olive oil onto your steaks (make sure they are room temperature) and cook on the BBQ to your taste.
Let the steaks rest for at least five minutes, then slice into strips.
Put the steak on top of the salad, drizzle dressing over.
